Depends on the brand -- and they will appear in the federally-mandated
list of ingredients.

We have a few local dairies in our county that offer ice creams.  Cost
a bit more than the "usual" brands, but they are worth it.  There's
also Tillamook from Oregon:

I just looked at their vanilla bean, and it has "Tara Gum" and "Guar Gum".
