When I was in Hakodate, I ate squid sushi several times.  What I can't 
figure out is the texture.  It was tougher than I'd expect.  Squid being 
a somewhat gelatin creature in my imagination...  I think maybe it was 
from the tentacles.  Not much flavor, but filling.
