Je connais au moins une application capable de générer un document
parfaitement éditable à partir du PDF soumis par Sergio, mais elle ne
tourne pas sous Linux, hélas. Il s'agit d'Affinity Publisher, et voici
ce que l'on obtient à l'ouverture (après avoir simplement opéré une
substitution des polices) :

La seule chose qu'il reste à faire manuellement, c'est de lier chaque
bloc de texte avec le suivant.

Sous Linux, Scribus fournit un résultat visuellement impeccable, mais le
texte s'affiche sous la forme d'images vectorielles, donc l'édition est
impossible.

Dans LibreOffice (Draw), le texte est bel et bien restitué, mais une
zone de texte est créée pour chaque ligne, ce qui rend l'édition très
pénible, et la substitution de polices n'est pas proposée avant
l'ouverture du document.
