It’s not an Americanism. Or an Australianism. It’s an English saying of
great antiquity. Quick means living (Old English “cwic”) as in the other
well-known saying “the quick and the dead”. “Cut to the quick” means to
hurt very deeply - and I’ve heard it used, but not often or by anyone under
40ish unless they were performing an older work.
