In my investigations, I found that in the U.S., crappy peanut butter is lower in fat than good peanut butter. 55% versus 70%, typically. The USDA defines peanut butter to be no more than 55% fat. I think they grind up the peanuts, take away the oil and sell it for frying, then add solid fat back to the peanut meal. -- Cindy Hamilton
