Dave, once you get that fancy, it's not tartar sauce anymore though it may be used on fish if you wanted to. I'd give it another name. Tartar sauce has mayo as the predominant ingredient. Cornishons? They are just little pickles, they are also called Gherkins. Often sweet. I use bread-n-butter pickles minced (sort of sweet).
