It's chicken soup day and time to use up some of the home rotisseried chicken. We have about 14oz left which may be frozen later this evening. 1 can diced tomatoes 1 can black beans 22 oz chicken broth 3/4lb shredded chicken (white and dark) 2 tsp basil 1 tsp Mount Olympus greek seasoning 1 tsp black pepper 1/2 tsp celery seed It's going vert low to a bare simmer. Since the chicken also has white meat, I don't want it to cook too long and turn the white to dry tasteless stuff. Sides will be rice and flat Italian green beans. Smells lovely!
