I use a small non-stick skillet and swirl it around (with the butter as it melts). I've never tried it with only olive oil. Doesn't seem like it would taste as good without the butter. If I were making two grilled cheese sandwiches at a time I'd use a slightly larger non-stick skillet. :) Jill
