Perhaps people like the mellowing effect of combining it with other ingredients. And, of course, not everybody cares that it's "fairly expensive". The store brand is about $12/pound. Stilton at Amazon is about $25/pound. Gorgonzola is about the same price at various places. -- Cindy Hamilton
