One thing I've done a couple of times was to make special arrangements ahead of time. It was always on a slow night and always arranged with the owner/chef. I'd call or stop in and tell them what I wanted. We'll order a drink, then I want dinner for two, three courses, an appropriate wine. Do not bring a menu to the table. That's it. The chef decides what we will be eating! The chef liked it because he was free to make things other than another serving of #4 on the menu. If that is what he make it would have a twist of some sort to his preference. Not something to do on a busy Saturday night, but on a half empty Tuesday, the staff seemed to enjoy it too.
