Sign the various spots in a document, then scan each page to JPEG format (better than PNG for emailing), save each one with an ordinal name, then: $ convert *.jpeg official-document.pdf Easy peasy! We also used imagemagick (and libreoffice) to convert a variety of documents to PDF for a project at work (years ago). This was on Windows.
