Bonjour à tous (si ce pluriel a encore sa raison d'être...)

Dans son /Syntagma de alimentis/, Seth nous dit à propos de la viande 
de porc : τὰ δὲ λεγόμενα τούτων (sc. χοίρων) σκουτάρια (v.l. σκοτάρια) 
δύσπεπτα καὶ δυσκατέργαστα καὶ διὰ τοῦτο ἀπέχεσθαι χρή quant aux 
morceaux du porc qu'on appelle *skoutaria*, ils sont indigestes et 
difficiles à assimiler, c'est pourquoi il faut s'en abstenir.

Mais de quels morceaux s'agit-il ? Le mot est apparemment un hapax.
Toute aide sera la bienvenue.
